THE TAGGIASCA OLIVES
These olives are mostly grown in the western part of the Ligurian Riviera, especially in the Imperia province—where they come from Taggia. The area’s unique climate gives these olives their special qualities.
Taggiasca olives are medium to small, with an elongated oval shape and a smooth skin. Their flesh is firm and stays that way over time. They’re also known for their distinctive colors, ranging from green to purple and finally to a deep brown. They have a sweet, balanced taste and a unique aroma.
